There is no off-season for the whole country — only for individual valleys. Gudauri flies all year; Kazbek has its August; Svaneti and the coast are summer places. Here is the full calendar.

Gudauri switches to its winter programme on 5 December: snow, ski runs below, short and spectacular flights — you can even launch on skis. Bakuriani is at its peak, with snow on the pine slopes. Near Tbilisi and in Ananuri we fly all winter; in Ananuri the low water can even reveal a flooded medieval church. Svaneti and the coast are closed for tandems.
Snow leaves the lower slopes and the valleys turn green. On 16 April Gudauri moves to its summer programme with the longest flights. Spring weather changes fast, so keep some flexibility. May opens the season on the Batumi coast — April and May are the driest months there.
Every location is open. Mestia opens in June; August is the most dependable month for Kazbegi and the warmest on the coast, where the sea reaches 25–26 °C. In the heat we start earlier in the day, while the air is calmer.
Late summer and early autumn bring the cleanest air in Svaneti — the best windows for Mestia's long flights, until the season closes in October. Forests around Ananuri and Bakuriani turn yellow and red. On the coast September and October are the wettest months, so keep a spare day there. Gudauri keeps flying through it all.

It depends on where. Gudauri flies all year; August is the best month for Kazbegi; Mestia runs June to October with its best windows in late summer and early autumn; Batumi runs May to October.
Yes. From 5 December to 15 April Gudauri runs a winter programme, Bakuriani is at its peak, and Tbilisi and Ananuri fly all year.
